There are some quick healthy recipes that won’t consume much of your time to prepare and you can also make sure that you are having healthy food while having a great time with your friends and family. Recipe 1: Potato Salad
To make this easy picnic recipe you’ll need:
Red potatoes (small/medium): 3 pounds (or 6-8)
Mayonnaise: ½ cup
Sour cream: ½ cup
Galleria brand Dilly Dip Herb (or Spice Mix): 1½ tbsp.
Onion (diced): ½ cup
Green or red bell pepper (diced): ½ cup
Salt and black pepper: to taste
Preparation:
To make this recipe take a small bowl and beat the sour cream, mayonnaise and the dilly, you should mix them evenly. Keep this mix in the refrigerator for more than an hour. Take a big saucepan and boil the potatoes with some added salt (a dash). Simmer the flame and cook until the potatoes become tender. Drain the potatoes and place them in a colander over a hot pot and let them steam for 5 minutes. Now, cut the potatoes into quarters and place them in a big bowl. When the potatoes are warm pour the dilly dip dressing over them to moisten them. Add the onions, pepper and salt and toss the ingredients well. Refrigerate until you are ready to leave for the picnic. Easy to make and yummy in taste, this picnic recipe is sure to make your day.
Recipe 2: Chicken Salad Sandwich
For this recipe you’ll need:
Chicken breasts boneless and skinless (stewed, diced in small pieces): 3 pieces
Mayonnaise: 1/3 cup
Sour cream (fat free): ½ cup
Lemon juice (freshly-squeezed): 1-2 tablespoons
Green or red grapes (seedless cut in half): 2 cups
Salt: ½ tsp.
Pepper: ½ tsp.
Dried parsley: ½ tsp.
Poppy seeds (optional): 1 tsp.
Pecans or walnuts, chopped: 1 cup
Buttery croissant rolls: large
Romaine lettuce: cut to fit the croissants
Preparation:
To make this recipe mix the sour cream, mayonnaise and the lemon juice in a large bowl. In this mix, add the diced chicken pieces and the pecans, mix the ingredients well. Next, add the parsley and grapes and the poppy seeds and stir them well. Refrigerate this mixture for 1-2 hours. Take croissants, and if they are not already cut into half, then cut them from the middle. Place the lettuce leaves on the cut croissants and some of the chicken salad mix on the lettuce leaves. Cover with the other side of the croissant and pack them to carry for your expedition.
When you are leaving for a picnic, do not forget to carry some drinks. If it is a summer picnic, make sure that you have plenty of juice bottles packed while leaving.
