Beta-carotene is a very important nutrient that plays great role in maintaining perfect health. It gets converted to vitamin A and helps to maintain the eyes in perfect condition. • Recently, sweet potato is also found as a good source of beta carotene. It is a very tasty vegetable which everyone loves to have. As it is rich in calories, diabetics and obese people should watch out. It tastes very good if it is cooked with added amount of jaggery, which is a good source of iron. If you love the original taste, you can cook it as such and have it. However, to retain the nutrients, it is recommended to not peel the sweet potato before cooking. Once you cook it, it is very easy to get rid of the skin.
• If you love to have salads then include more amounts of greens. Green leafy vegetables that are good source of beta carotene are lettuce and spinach. However, while having salads reduce the amount of salad dressing you use. This may increase the amount of calories you consume and poses the problem of obesity. Another way to have these green leafy vegetables is to make a soup by boiling them.
• Pumpkins and squash are also among the list of foods that are rich source of beta carotene. They also have abundant quantity of water and low amount of calories. Hence, you can take them in generous amounts. The seeds of those squashes also help to get rid of tapeworms and round worms.
• Avocado is another food that is a rich source of beta carotene. This also has many other benefits. It is known to improve the growth of hair and helps to overcome the problem of anemia. Another benefit about avocado is that it is very easy to digest.
• Cabbage is another vegetable that is a rich source of beta carotene. Cabbage is considered as a perfect food as it is rich in even other nutrients that are useful for maintaining perfect health.
• Tomatoes, asparagus and radish are other vegetables that are rich in beta carotene.
To enjoy good health, it is recommended to include at least a few of these beta carotene rich foods in regular diet.
